Cooking Psychology



     My psychiatrist friend call us and asked if we can be his guinea pig in his experiment , he wants to study all of his friend while cooking a perfect sunny side up egg and whoever win will have a prize and he even said that he will analyze all four of us to aware of our weakness and strength.. and we all agree... 
    The rules are simple (that what we believed) for us to win a vip concert ticket..
1. 30 minutes for each of us to cook a perfect sunny side-up egg
2. only 24 egg will  be use for every participant
3. no bubbles on the sunny side-up, clean area, good shape, the yellow must be in the center
4 Not overcooked or raw

Making the perfect sunny side up egg is all about patience and perseverance.  I tried to get it right and most of us did.. While cooking and getting the perfect one we realized is not that easy. Laying the egg carefully in egg-shaper in able not to have bubbles is not an easy task or putting the yolk in center is way too hard and we realized that the 30 minutes time is too short and the 24 pieces of eggs is not enough as well. If your out of egg its over for you and you nee to choose the best sunny side-up you cooked.
While my friends cooking I studied every of their mistake and try to get it right. so I turn on the stove about a medium high and when I'm sure its hot enough I lowered the heat before I put the eggshaper in the frying pan and put a little oil and leave it again for 5 minutes. Putting the egg in  eggshaper need a lot of hard work because I wasted 18 pieces of egg in able to get my almost perfect fried egg, I applied all of the techniques I know from using a knife, peeling the sharpest tip of the egg to carefully laying it on the pan and constantly checking the heat...  I got 3 sunny-side up but the first one has smudges, the 2nd has 5 bubbles but the yellow yolk is at center, the 3rd is the yolk almost at center, no bubbles but not in perfect shape. until my time is over and even request for extension and my friends said RULES ARE RULES!..
eventually no one of us won.  

What I realize in the simple task... you must love what you are doing, do not hurry, enjoy what you are doing, don't get stress, don't make it complicated, patience is virtue,

Vietnam influence in Palawan

    I'm supposed to post about food fact but when I saw the Vietnam Flag in  my  top 10 visitor widget.  It reminds me of Chaolong, My vietnamese bestfriend Tham and the influences of  Vietnam.
     The Vietnamese migrants began arriving in the Philippines(also known as boat people), after the fall of South Vietnam in 1975. Unlike any other Asian Countries they were persecuted and abused. Vietnamese found refuge in the Philippines, they were given aid and Shelter. The United Nations put up a camp in Palawan to process the genuine refugees for resettlement and to screen out those not qualified for refugee status. But when the refugee program ended, the Palawan camp was declared closed in 1996.
     I remember when my family arrived in Palawan in 1988, as a 5 y.o.  kid I thought that I'm in China because I saw a lot of Vietnamese and I thought they are Chinese because I assumed that the language I heard is Mandarin. My father treat us in VietVille to know them better.

    A glimpse of Vietnam. A symbol of local hospitality and tolerance. A special place for a  small community of Vietnamese refugees in Palawan. Now this serves as one of tourist attraction in PuertoPrincesa City, Palawan. 





    ChaoLong & French Bread
      I have no idea why they called it chaolong, when the noodle dish is more aptly called pho (phở). Chao long is the vietnamese congee (rice porridge) with either with pork, beef, chicken innards. The noodles is made of rice instead of cornstarch. uhmmm.. maybe because of the filipino slang word "chow" means to eat, and the noodles is Long.
   French Bread a Vietnamese bread baquette or bánh mì. The usual stuffing of french bread are pork or chicken with some cucumber, tomato, bánh mì sauce. With addition soysauce and mayonnaise.




     Fresh Rolls
     The Vietnamese version of Fresh Lumpia(spring rolls). The fresh rolls are wrapped in rice paper and have pork, shrimp, bún or rice vermicelli, herbs, and other ingredients inside. Also serves as fried.


   When visiting Palawan remember to eat Chaolong and french bread. Those two are easy to find since a lot of chaolong house can be seen in town.

Exotic Chicken

        Pinoys are known for their love for cooking and eating. Filipino dishes are easy to cook, but sometimes use a lot of different ingredients. With a little budget in hand and resourcefulness, Pinoy can have a delicious meal or an appetizer. Others will find it disgusting and for some of the list here will fall for the category of  exotic food. The throway part for others, the delicacy of the other one. So theres no room for waste.
       
So here is the list of Chicken Part



Chicken Spleen Arrozcaldo
      The guya rice porridge main ingredients is a sautéed ovary duct of a chicken. It is similar to arroz caldo Another variant of this is the egg caldo. Instead of using ovary duct or chicken meat, an egg is added on the
rice porridge.



Adidas (Chicken Feet)

       They called it adidas because of brand name of shoes adidas. Either you cook it by grilled or deep fried, You will enjoy and get challenged to eat adidas because of the small bones are hard to chew, it is diffucult to eat.  Most of the edible meat on the addidas consists of  skin and tendons that gives this feeling that you are chewing a gum.

With the resemblance of the motorcycle helmet Filipino named the chicken head for that.
Helmet can be cooked my grilled. deep fried or adobo (sauteed with garlic & onion in vinegar and soy sauce). The distinctive taste of the chicken skin and the brain mkes its unique.

Isaw (chicken small intestine)
Can be grilled or deep fried. the bitter taste of Isaw is most likely feces. (check photos below).

Proben(chicken proven)
It's the proventriculus  of a chicken, dipped in flour with seasoning, and  deep-fried. Skewered on bamboo sticks to be dipped in the vinegar just before it is eaten or not, since the breedings give a delicious taste.

Betamax (chicken blood)
A chicken blood that has been formed in an open container. They called it betamax because of the shape. It is often grilled and dip in vinegar w/ soysauce.

Deep fried 1day old chick
Yep! a naked 1 day old chicks. Deep fried.
